aceti, Acetobacter pasteurianus, and G. oxydans are commonly found on grapes or in wine. A new species, Acetobacter oeni, has recently been isolated from spoiled red wine (Silva et al., 2006). Although all three main species occur on grapes, and in must and wine, their frequency differs markedly.
